🇨🇳 China recipe
Red Braised Pork Belly (Hong Shao Rou)
One of the most iconic dishes in Chinese home cooking and famously a favourite of Chairman Mao. Cubes of skin-on pork belly are gently braised in a deeply flavoured sauce of caramelized sugar, Shaoxing wine, soy sauce, and warm spices until the meat is meltingly tender and the sauce is thick, glossy, and mahogany-coloured.
