🇦🇷 Argentina recipe
Locro
Locro is Argentina's most patriotic dish, a magnificent pre-Columbian stew of white hominy corn, beans, squash, and various pork cuts simmered for hours into a thick, hearty porridge. Traditionally served on May 25th to celebrate the anniversary of the May Revolution, it represents the indigenous and criollo culinary heritage of the nation. Each bowl is crowned with a spoonful of quiquirimichi, a spicy paprika and scallion garnish.
