Banosh
A treasured dish of the Hutsul people from the Carpathian Mountains, banosh is a rich cornmeal porridge cooked slowly in thick sour cream rather than water or milk. This gives it an incredibly creamy, velvety texture and a tangy depth that pairs perfectly with crumbled brynza sheep cheese and crispy shkvarky (rendered pork cracklings). It is mountain comfort food at its finest, traditionally cooked over an open fire by men.
