Zefir

Zefir is Russia's ethereal answer to French meringue and marshmallow, yet it is entirely its own creation. Made from fruit puree, whipped egg whites, and a cooked sugar syrup with agar-agar, zefir has an incredibly light, cloud-like texture that dissolves on the tongue. Traditionally made with tart apple puree, these elegant confections are piped into swirled rosettes and left to set overnight before being dusted with powdered sugar or dipped in chocolate.
