Pisto Manchego

The rustic vegetable stew of La Mancha, often called Spain's ratatouille. Diced tomatoes, peppers, courgettes, and onions are slowly simmered in olive oil until they melt into a thick, jammy stew. Traditionally served with a fried egg on top or alongside cured meats, pisto is simple peasant food elevated by patient cooking and excellent olive oil.
