🇪🇸 Spain recipe

Crema Catalana

Catalonia's answer to crème brûlée, and arguably the original, predating the French version by centuries. A silky custard is infused with cinnamon sticks and lemon zest rather than vanilla, giving it a distinctively Mediterranean character. The top is caramelized with a hot iron or blowtorch just before serving, creating a glassy, crackling shell over the cool cream.
