🇵🇭 Philippines recipe

Kare-Kare

Kare-Kare is a celebration dish, a rich and luxurious peanut-based stew of oxtail, tripe, and fresh vegetables simmered until the meat is fall-off-the-bone tender. The thick, golden sauce gets its nutty depth from ground roasted peanuts and its vibrant color from annatto seeds. Traditionally served at fiestas and special gatherings, Kare-Kare is always accompanied by bagoong (fermented shrimp paste) for a salty counterpoint.
