🇮🇪 Ireland recipe
Colcannon
Colcannon is Irish comfort food at its most elemental: creamy mashed potatoes enriched with butter and folded through with softened cabbage or curly kale and plenty of scallions. Traditionally served at Halloween with a ring or coin hidden inside for fortune-telling, it is also a beloved everyday side dish throughout the year. A proper colcannon should have a well of melting butter in the center that you dip each forkful into.
