Boxty

As the old Irish rhyme goes, 'Boxty on the griddle, boxty in the pan, if you cannot make boxty, you will never get a man.' This traditional potato pancake from the midlands and northwest of Ireland combines raw grated potato with mashed potato to create a unique texture that is crispy on the outside and soft within. Boxty has enjoyed a revival in recent years and appears on fine dining menus across Dublin.
