🇮🇪 Ireland recipe
Champ
Champ is the beloved potato dish of Northern Ireland, simpler even than colcannon. Where colcannon folds in cabbage, champ lets the partnership of potato, butter, and scallion shine unadorned. The scallions are gently infused in warm milk before being beaten into fluffy mashed potato, and the whole thing is crowned with a well of golden melting butter. In rural Ulster, champ was often the main course for supper, served with nothing more than a glass of buttermilk.
