Gratin Dauphinois

From the Dauphine region near Grenoble, this is the original and most iconic French potato gratin. Paper-thin slices of potato are layered in a garlic-rubbed dish, bathed in cream infused with nutmeg, and baked until the top is deeply golden and the interior is meltingly tender and creamy. The authentic version uses no cheese whatsoever.
