🇮🇩 Indonesia recipe
Ayam Betutu
Ayam Betutu is a sacred Balinese dish traditionally prepared for temple ceremonies and important celebrations. A whole chicken is rubbed inside and out with a rich, aromatic base genep spice paste, then wrapped tightly in banana leaves and slow-cooked for hours until the meat is impossibly tender and infused with layers of complex flavor. The result is a dish of extraordinary depth, with the banana leaves imparting a subtle grassy sweetness.
