🇹🇳 Tunisia recipe
Kamounia
Kamounia, named for kamoun (cumin in Arabic), is a deeply comforting Tunisian stew where cumin plays the starring role. Traditionally made with beef or liver, the meat is braised in an almost improbable amount of cumin-spiced tomato sauce until meltingly tender and the sauce has reduced to a thick, dark, intensely aromatic gravy. It is one of those dishes that smells so powerfully of cumin that the aroma lingers in the kitchen for days, a badge of honor for the cook.
