🇮🇷 Iran recipe
Ash Reshteh
Ash Reshteh is a thick, nourishing noodle soup that is one of the most iconic comfort foods in Iranian cuisine. Loaded with a variety of legumes, fresh herbs, and flat reshteh noodles, it is traditionally served during Nowruz and on the eve of the winter solstice. The soup is crowned with a trio of garnishes: tangy liquid kashk (whey), deeply caramelized onions, and fragrant mint sauteed in oil, creating a complex interplay of flavors in every spoonful.
