🇨🇭 Switzerland recipe
Malakoffs
Named after the siege of the Malakoff tower during the Crimean War by Swiss mercenaries who brought the recipe home, Malakoffs are golden, deep-fried cheese fritters from the La Cote region of Vaud. Grated Gruyere cheese is mixed with eggs, flour, white wine, and kirsch into a thick paste, mounded onto rounds of white bread, and fried until puffed and gloriously golden outside while molten and stretchy within. They are a fixture at festivals and wine tastings throughout the Vaud canton.
