🇱🇰 Sri Lanka recipe
Hoppers
Hoppers, or appa, are one of Sri Lanka's most iconic foods. These bowl-shaped crepes are made from a fermented batter of rice flour and coconut milk, cooked in a small, rounded wok-like pan called an appachatti. The edges turn thin and lacy-crisp while the center remains soft and spongy. Egg hoppers, with a whole egg cracked into the center during cooking, are the most popular variety. Hoppers arrived in Sri Lanka through South Indian and Southeast Asian culinary traditions, evolving into a uniquely Sri Lankan staple.
