🇷🇴 Romania recipe
Pomana Porcului
Pomana Porcului, literally 'the alms of the pig,' is the celebratory feast dish prepared immediately after the traditional Romanian winter pig slaughter, known as Ignat. Freshly cut pieces of pork -- including choice cuts and some fat -- are fried in their own rendered lard until golden and crispy on the outside while remaining juicy within. Served steaming hot with raw onion, garlic sauce, bread, and a glass of tuica, it is a primal and convivial dish that brings families and neighbors together.
