🇷🇴 Romania recipe
Jumari
Jumari are crispy, golden pork cracklings that are an essential part of the Romanian winter tradition. Made during Ignat, the annual pig slaughter in December, pieces of pork fat and skin are slowly rendered in a large cauldron until all the fat melts away and the remaining bits become irresistibly crunchy. Seasoned simply with salt and garlic, jumari are enjoyed hot with bread and raw onion, accompanied by a glass of tuica.
