Masas de Cerdo
Masas de cerdo, or masas de puerco, are chunks of pork shoulder that are first braised low and slow in a mojo marinade until falling-apart tender, then fried in their own rendered fat until the exteriors become deeply caramelized and impossibly crispy. The contrast between the crunchy, almost caramelized outside and the melt-in-your-mouth tender inside is what makes masas one of the most craveable dishes in Cuban cuisine.
