Carnitas
Carnitas, meaning 'little meats,' is the pride of Michoacan and one of Mexico's most revered pork preparations. A whole pork shoulder is slowly braised in rendered lard with aromatics until the connective tissues dissolve and the meat becomes impossibly tender, then the heat is raised at the end to create deeply caramelized, golden-brown crispy edges. The contrast between the silky, melt-in-your-mouth interior and the shattering, almost crackling-like exterior is what makes carnitas one of the greatest pork dishes in the world.
