Birria de Res
Birria de Res is a majestic beef stew from the state of Jalisco, traditionally prepared for celebrations, weddings, and holidays. Large cuts of beef are marinated in a deeply complex adobo made from multiple varieties of toasted dried chiles, warm spices, vinegar, and aromatics, then braised low and slow for hours until the meat is impossibly tender and the cooking liquid has transformed into a rich, crimson consomme. Birria is served in deep bowls with its consomme, garnished with diced onion, cilantro, and a squeeze of lime, always accompanied by warm tortillas for making tacos.
