Suspiro Limeño
Suspiro Limeño, meaning 'sigh of a Limeñan woman,' is one of Peru's most romantic and iconic desserts. The story goes that the poet Jose Galvez named it after tasting the creation of his wife, Amparo Ayarza, declaring it to be as soft and sweet as a woman's sigh. The dessert is composed of two layers: a dense, caramel-colored manjar blanco base made by slowly cooking condensed milk with egg yolks until thick and custardy, topped with a billowy meringue made with port wine, cinnamon, and vanilla. The contrast between the heavy, sweet base and the light, wine-scented meringue is what makes this dessert so captivating. It is traditionally served in individual glass dishes to showcase its beautiful layers.
