🇸🇬 Singapore recipe
Satay
Satay is the quintessential Southeast Asian street food, and Singapore's version is among the finest. Skewers of chicken, mutton, or beef are marinated in a turmeric and lemongrass paste, threaded onto bamboo sticks, and grilled over glowing charcoal until smoky and caramelized at the edges. They are served with a rich, chunky peanut sauce, cubes of compressed rice cake, and a refreshing cucumber-onion relish dressed in vinegar.
