🇪🇬 Egypt recipe
Molokhia
Molokhia is one of the oldest dishes in Egyptian cuisine, a thick, deeply savory soup made from the finely chopped leaves of the jute mallow plant. The dish gets its distinctive viscous texture from the mucilage in the leaves, and it is finished with a sizzling garlic-coriander tashqiya that perfumes the entire pot. It is true Egyptian comfort food at its most elemental.
